Multi-Bean Soup
| 1lb pack 15 Bean Soup Mix |
| 15oz can Del Monte diced tomatoes |
| Large Onion |
| 1tbsp Salt |
| Red pepper |
| Polska Kielbasa sausage |
| Water |
Wash the beans thoroughly, then soak overnight. Drain, rinse, then cover with 2-3 quarts water. Add sausage, sliced thickly. Bring to boil, then simmer gently for 3 hours. Chop the onion into small pieces, and add it and remaining ingredients to the soup. Add water if necessary. Bring to boil, then simmer for another hour.
This soup freezes well, and thickens with keeping. Del Monte does a number of different varieties of diced tomatoes, all of which give the soup a slightly different flavor.
